This microlot is crafted with meticulous care. Cherries are hand-picked based on strict ripeness criteria, then pulped and subjected to 35 hours of dry fermentation. Following this, the cherries are dried on raised beds for 11 days until they reach a moisture content of 10%.

Varietal Details:
This microlot is 100% Castillo, a variety developed by the Federación Nacional de Cafeteros. It is known for its high productivity and resistance to coffee leaf rust, making it more robust compared to Caturra.

Producers:
This coffee is produced by indigenous growers from Aponte, Nariño, who are members of La Cooperativa de Cafes Especiales de Nariño. The producers operate at altitudes above 1700 masl, with farms ranging in size from 0.5 to 1.5 hectares. In Aponte, growers have perfected the Honey process, having produced Honey-processed coffees for the past four years.

Environmental and Cultural Context:
The small production scale and low relative humidity in Aponte contribute to faster drying times and efficient use of space. The Aponte indigenous reserve, situated within Tablon de Gomez, is recognized globally by many roasters. The community has a unique language, political system, and social structure. Not long ago, the area was perilous due to guerrilla forces compelling locals to cultivate illicit plants. However, the community united to end their dependence on drug production, reverting to traditional agriculture and coffee cultivation, thereby reclaiming their economic independence.
