Where it all began
Academy Coffee began in 2015, founded by Matthew Swiatkiwsky after years working in hospitality. Before coffee, Matthew worked as a chef and developed a deep appreciation for the craft and rhythm of the industry.
What started as a passion for great coffee and good service grew into Academy Coffee — a roastery built around quality, consistency and genuine partnerships with the cafés and people we work alongside.

In 2017, we opened our café in Orange, NSW. It became a place to share the coffee we were roasting and connect with the local community. The café helped shape the way we approach coffee today — focusing on quality, consistency and hospitality.
Roasting & Growing Academy
As Academy grew, roasting became central to what we do. We moved into a new roastery and installed a Probat UG22 — a roaster built for precision and consistency.
Around the same time, Matthew travelled to Germany to visit the Probat factory, spending time learning about the engineering and craft behind some of the world’s most respected coffee roasters.
What We Believe
We believe great coffee is built on more than what’s in the cup. It’s about community, hospitality and the people who make it all possible.
Over the years, we’ve been fortunate to use our space to support local services and raise funds for causes that matter to our community. Alongside our love for coffee, we’re proud to have built a coffee family of staff, customers and friends who make Academy what it is today.
