Hailing from the renowned Gedeb region of Ethiopia, this coffee finds its roots at the esteemed Halo washing station. Established in 2016, Halo quickly rose to prominence within Gedeb, covering a vast expanse of 1240 hectares dedicated to coffee cultivation. Located near Worka Town, the station's elevation at 2100 meters above sea level is pivotal, offering the surrounding 170 farm owners—each managing plots ranging from 0.5 to 2 hectares—a convenient, under 40-minute journey for cherry delivery.

The meticulous attention to quality begins with the hand-picking and sorting of cherries, a task performed by adept workers to ensure only the finest cherries proceed. The region's predominate Kurume variety, celebrated for its vibrant flavors and unique characteristics, undergoes a rigorous selection process. Cherries deemed too light are removed in a flotation tank, leaving behind only the ripest and most dense for processing.

Drying is an art here, with cherries spread on raised African beds to promote superior airflow and even drying. This critical phase lasts 15-21 days, weather-dependent, with cherries constantly monitored and rotated to achieve an even dryness. This meticulous process not only preserves but amplifies the coffee's natural complexities, yielding a cup that's rich, full-bodied, and emblematic of Gedeb's distinctive terroir.

This offering from the Halo washing station is a testament to the local farmers' dedication and the careful, precise processing it undergoes. From the initial selection to the attentive drying, every step is calibrated towards crafting an unparalleled coffee experience. With its high elevation, boutique farm sizes, and unwavering focus on quality, this coffee encapsulates the essence and esteemed reputation of Ethiopian coffee, marked by its crisp acidity, smooth body, and a symphony of flavors including apple, lemon, orange, honey, with a delightful peach finish.
