Green Apple, Tangerine, Grapefruit & Brown Sugar
From the lush hills of Tolima comes this standout washed lot by Santiago Patiño, whose farm is perched at 1,700–1,900 meters above sea level. Rich volcanic soils, cool nights, and warm days create ideal conditions for slow cherry maturation and exceptional flavor development.
Cherries are meticulously handpicked at peak ripeness, then pulped and fermented in water tanks to remove the mucilage. After fermentation, the coffee is thoroughly washed and sun-dried on raised beds, ensuring clarity and balance in every cup.
In the cup, this washed Colombian coffee delivers bright, clean flavors with notes of green apple, tangerine, and grapefruit, rounded out by a sweet finish of brown sugar. It’s a lively and refreshing expression of Colombia’s vibrant terroir, capturing the dedication and craft of Santiago Patiño’s work.
This lot is a testament to the skill and care behind every stage of production—a bright, juicy, and balanced cup that speaks to the heart of Tolima’s coffee-growing tradition.
